Happy National Cherry Popsicle Day! We are holding onto Summer as long as we can here at the Mothers Lounge office especially here in Utah when those chilly months are just around the corner. So, what better way to do that than on National Cherry Popsicle day? We are all familiar with cherry cheesecake, but have you every tried it in a popsicle form?… The results are not far from amazing and these Cherry Crumble Cheesecake Pops will make you melt (no pun intended).

_B1B2142WHAT YOU WILL NEED:

Cheesecake Base

8 oz cream cheese

1/3 cup sugar

1/4 cup greek yogurt

1 tbsp lemon juice

1/4 tsp almond extract

Cherry Compote

2 cups pitted cherries

1/3 cup sugar

Graham Cracker Crust

1 tsp butter, melted

3 tbsp crushed graham crackers

_B1B2190Start by creating your cheesecake base by whisking or blending together your softened cream cheese, sugar, greek yogurt (we went with the whole fat but you can also use low fat), lemon juice, and almond extract. Be sure to mix until smooth.

_B1B2164Next, start on your cherry compote by pitting your cherries. Make sure you pit a heaping 2 cups of cherries. We used a cherry pitter to speed up the pitting process.

_B1B2207Add your cherries and sugar to a sauce pan and cook on medium/high heat until it starts to boil. Once bubbling, reduce heat slightly and use a wooden spoon to stir and mash the cherries to desired size. Continue cooking over medium-low heat for 10-12 minutes, occasionally mashing cherries to combine.

_B1B2229Remove from heat and transfer to an ice bath to stop the cooking process. Place compote aside and start on the graham cracker crust.

_B1B2215Place 4-5 graham crackers into ziplock bag and roll out graham crackers until smooth. Poor crushed graham crackers into small bowl with butter and combine until it resembles a wet sand texture.

_B1B2249Start filling your popsicle tray by alternating the cherry compote and cheesecake base until about 3/4’s full. Top with graham cracker crumble until full and place in freezer. We realized it’s best to keep the popsicles in the freezer at least overnight so they can properly freeze through and hold their shape.
