CAKE BATTER BIRTHDAY WAFFLES
It’s Birthday Month on the blog and we’re celebrating our MAIN girl all month long! Because let’s face it, we think she deserves a month of celebration for her big day! These Cake Batter Birthday Waffles are fluffy, fruity, delicious, colorful, and of course, full of that oh-so yummy cake batter-y flavor! I think we have officially decided cake batter anything is a win in our books. And we love that it’s easy – from start to finish this decadent dessert takes less than 20 minutes (score!).
WHAT YOU WILL NEED:
- No Stick Cooking Spray
- 1 Box Pillsbury™ Purely Simple White Cake Mix
- 1/3 cup Pure Vegetable Oil
- 1 cup water
- 3 large eggs
- 1/2 cup rainbow sprinkles, + additional for decoration
- 1 cup of your favorite fresh fruit – we used strawberries and blackberries!
- Whipped cream
INSTRUCTIONS:
- Whisk cake mix, oil, water and eggs in large bowl until combined.
- Stir in sprinkles.
- Coat waffle iron with no-stick cooking spray.
- Heat waffle iron to medium heat.
- Pour 2/3 cup of batter onto iron and bake 2 to 3 minutes or until done and repeat until batter is gone.
- Top each waffle with your favorite fresh fruit, whipped cream, and sprinkles as desired (we say the more the merrier).
- Serve immediately.
TIP: Good results start in the mixing bowl. Make sure to only mix until just combined. This means stop mixing as soon as you can’t see the ingredients that you just added. If you over mix, it can result in a more dense, chewy texture. No one likes a chewy, dense waffle.
Carefully stir in sprinkles. (Life is more fun with sprinkles!)
While waffle iron is heating up, start washing and cutting your fruit into desired sizes. TIP: Use a straw to to perfectly core your strawberries. Start at the bottom of the strawberry, push the straw up, and the core should pop right up!
Start pouring! Make sure each time you make a new waffle you coat the iron with no-stick spray to ensure the batter doesn’t stick to the iron.

Here’s the fun part! Start decorating your heart out adding whipped cream, sprinkles, and all of your favorite fruits (or none at all)! It’s really up to you!
We chose to stack the waffles into a birthday cake to make the presentation more fun! You can also single serve the waffles and let each person add their own toppings.
