Lasagna Soup

There’s nothing better than cozying up with a warm bowl of soup on a cold winter’s day, and this Lasagna Soup really hits the spot! It’s got everything you love about the classic Italian dish, but requires only half the effort. With the yummy cheeses, delicious sausage, and a hidden serving veggies, it’s the perfect recipe for the whole family!

Ingredients

Soup

1 lb. Italian sausage
1 Tbs. olive oil
1 Tbs. onion powder
1 Tbs. oregano
4 tsp. minced garlic
2 tsp. crushed red pepper
2 Tbs. tomato paste
28 oz. can diced tomatoes, undrained
6 C. chicken stock
1 medium zucchini, cubed
1/2 C. basil leaves
16 oz. bowtie pasta
Salt and pepper to taste

Cheese Mixture

8 oz. ricotta
1/2 C. parmesan
1/4 tsp. salt
Pinch of pepper
1 C. mozzarella for garnish

Directions

1) In a large saucepan, heat olive oil. Add sausage and cook until brown, about 6 – 8 minutes.

2) Add onion powder, garlic, oregano, and red pepper flakes. Cook for 1 minute. Stir in tomato paste.

3) Add diced tomatoes, basil, and chicken stock. Bring to a boil. Reduce heat and simmer for 20 minutes. Add zucchini and continue to simmer for an additional 10 minutes.

4) Meanwhile, cook the pasta according to the directions on the package.

5) In a small bowl, mix ricotta, parmesan, salt, and pepper to create the cheese mixture.

6) When the pasta is cooked and the soup is done simmering, drain the pasta and add it to the soup.

7) To serve, add a dollop of the cheese mixture to the bottom of a bowl. Pour the soup on top. Garnish with mozzarella and basil.
