It’s apple pie season, and we’ve got a hankering for that sweet, cinnamony goodness! Since it can be a little difficult to find the time or energy to make an actual homemade pie, we’re sharing the next best thing. These Apple Pie Enchiladas have all the deliciousness of a traditional pie, but take half the effort! It’s the perfect, quick dessert for any fall gathering. And as a bonus, your kids will love helping you make it!
Ingredients
21 oz. can apple pie filling
6-7 flour tortillas
1/2 C. butter
1/2 C. white sugar
1/2 C. brown sugar
1/2 C. water
Cinnamon, as needed
Directions
1) Preheat oven to 350 degrees.
2) Fill tortillas with apple pie filling, about 1/4 cup each.
3) Sprinkle cinnamon over filling as desired.
4) Grease a 9 x 13 inch baking pan with butter or cooking spray.
5) Roll the enchiladas and place in greased dish. Set aside.
6) In a saucepan, bring butter, sugars, and water to a boil over medium-high heat, stirring occasionally. Reduce heat and simmer for 3 minutes.
7) Pour caramel sauce over the enchiladas. Sprinkle more cinnamon on top as desired.
8) Bake in oven for 20 minutes or until golden. Serve warm with ice cream, caramel, or any other topping of your choice!
