Funfetti Ice Cream Sandwiches

Get your sweet tooth ready, because you’re in for a treat! Today, we’ve got just the recipe to satisfy your cravings on a hot summer day. These delicious Funfetti sandwiches are filled with creamy vanilla ice cream, crisp Fruity Pebbles, and sweet sprinkles, giving you the ultimate sugar rush. Make them for birthdays, family gatherings, or just for fun!

Ingredients

1 box of Funfetti cake mix
1/2 C. vegetable oil
2 eggs
1 tsp. baking powder
1/2 tsp. vanilla
1/2 C. sprinkles + extra for topping
Vanilla ice cream
Fruity Pebbles cereal

Directions

1) Preheat oven to 350 degrees.

2) In a large bowl, combine cake mix, oil, eggs, baking powder, and vanilla.

3) Add half a cup of sprinkles and gently fold into dough.

4) Roll the dough into balls and place them onto a greased cookie sheet. Add more sprinkles on top of the dough as desired.

5) Bake in preheated oven for 12 minutes, until cracks begin to form on top and the cookies have browned on the bottom. Let cool for 20 minutes.

6) Scoop ice cream onto the underside of a cookie. Using a knife, spread the ice cream out until it reaches the edge on all sides. Place a second cookie on top to form a sandwich.

7) Roll or pack the Fruity Pebbles onto the sides of the sandwich where the ice cream is exposed.

8) If needed, place the sandwiches in the freezer for at least 20 minutes to let the ice cream set. Enjoy!
