Happy (almost) St. Patrick’s Day! I think everyone will agree, Lucky Charms definitely make the top 5 list for best cereals of all time. But let’s just cut to the chase, would it even make the list without those charms!? Those mini marshmallows are eternal. As a kid, I’m sure we all enjoyed eating every last charm from the bowl while the soggy cereal bits got left behind. That’s why we’re so excited to share this fun St. Paddy’s day breakfast recipe using ONLY the charms.

These Lucky Charm Pancakes are not only super fun, but they’re magically delicious and may or may not be part of a healthy balanced breakfast.

WHAT YOU NEED

Pancakes

  • 2 Cups of Pancake Mix
  • 1 1/2 Cups of Water
  • 4-6 Drops of Green Food Coloring

Toppings

  • Lucky Charm Marshmallows
  • Whip Cream
  • Syrup
  • Fruit (optional)

1Mix together water, pancake mix, and food coloring in a bowl until just blended.2After mixed, adjust the color as needed by adding a few more drops of coloring until it meets the desired green color you prefer.4Heat a greased skillet over medium heat and pour about 1/4 cup batter onto the pan for each pancake.5Cook each pancake approximately 3 minutes or until bubbles form on top and edges. Flip and cook for another 3 minutes.pancakesx3While you’re cooking the pancakes, have the kids sort the marshmallow charms from the cereal. This is also a perfect time for a teaching moment too! Have your kids sort the marshmallows according to shape or color while they wait for the pancakes to cook.6Then, start preparing the toppings! Don’t be afraid to add a little fruit to your pancake toppings to make them more on the healthy side. We chose to slice up some bananas and we have to say, the combination of charms and bananas is perfect!8Now that you have all your toppings prepared and pancakes cooked… start decorating! You can get as creative as you want! We chose to make a fun pancake cake stack, but you can also single serve them and let your kids choose their own topping!9Is your mouth watering yet?
