Strawberry White Hot Chocolate

February is coming to a close, and we’re wrapping up this love-filled month with something extra sweet! This delicious hot chocolate is the perfect treat for transitioning from winter to spring. And as a lovely twist, this warm beverage is made with smooth white chocolate and homemade strawberry purée!

Ingredients

12 oz. strawberries, fresh or thawed from frozen
1/4 C. granulated sugar
3 C. milk
6 oz. white chocolate chips
1 tsp. vanilla extract
A pinch of salt
2 – 3 drops red food coloring (optional)
Whipped cream (optional)
Sprinkles (optional)

Directions

1) Cut the stems off of the strawberries and place them in a bowl. Sprinkle sugar over the strawberries and toss until evenly coated.

2) Let the sugar coated strawberries sit for about 10 minutes, allowing the juices to release.

3) Using a blender, purée the strawberries until smooth. If there are any leftover seeds, you can use a sieve or cheese cloth to remove them. Your purée should equal about 3/4 of a cup. Set aside.

4) Bring the milk to a simmer over low heat, whisking constantly.

5) When bubbles form around the edges, remove the milk from heat and stir in the white chocolate chips until smooth.

6) Add the strawberry purée, vanilla, and a pinch of salt. Whisk until well combined. If desired, add a few drops of red food coloring to create a deeper shade of pink.

7) Serve the hot chocolate in a mug and top it off with whipped cream and sprinkles for an added touch!
