I don’t know about you but this fall weather has us craving all sorts of warm, hearty soups! This Creamy Tomato Basil Tortellini Soup was a win over at the Mothers Lounge office! It is absolutely delicious, packed with rich flavors, and is sure to become a new family favorite in the home! If you are looking for a new recipe idea for your upcoming family dinner or party, this is definitely a must try!

INGREDIENTS:
- 1 medium diced yellow onion
- 3 garlic cloves, peeled and minced
- 1 teaspoon olive oil
- 1 spring of chopped rosemary
- 24 ounces canned diced tomatoes
- 15 ounces canned tomato sauce
- 1/2 dried oregano
- 4 large fresh basil leaves
- ½ teaspoon salt
- ¼ teaspoon pepper
- 4 cups chicken stock
- ½ cup heavy cream or greek yogurt for healthy alternative
- 15 ounces three-cheese tortellini
- ½ cup shredded parmesan cheese
DIRECTIONS:
- In large pot add onion, garlic, olive oil, and rosemary and sautée over medium heat for 5 minutes.
- Add in diced tomatoes, tomato sauce, oregano, basil, salt, pepper, chicken stock, and heavy cream. Stir until combined and let simmer for 20 minutes.
- Pour in three-cheese tortellini and 1/2 cup parmesan cheese and cook until tortellini is al dente. (approximately 12-15 minutes).
Serve warm and don’t forget to garnish with basil and parmesan for an extra pretty presentation.
Sauteé onion, garlic, olive oil, and rosemary over medium heat for 5 minutes.
Add in tomatoes, sauce, oregano, basil, salt, pepper, chicken stock, and heavy cream and let simmer for 20 minutes.
Pour in three-cheese tortellini and parmesan and cook until tortellini is al dente.
Garnish as desired with basil and parmesan.
