Golden Salsa with Shamrock Tortilla Chips

St. Patrick’s Day is just a few short days away, and we are dying to share this fun, new recipe with you! No matter how you’re celebrating the holiday, this delicious appetizer is sure to be the “pot of gold” at the end of your rainbow. Literally! This festive dish consists of fresh golden salsa and oven-baked shamrock tortilla chips. It takes less than 30 minutes to make, but looks like you spent a lot of time preparing. Plus, it’s so good, both you and your little leprechauns will be coming back for more!

Ingredients

Golden Salsa:

2 pints golden cherry tomatoes
1/3 C. chopped yellow onion
1/2 tsp. salt
1 ½ tsp. lime juice
1/4 C. chopped fresh cilantro
1/3 C. diced yellow bell pepper
1/2 to 1 jalapeno pepper
1 garlic clove, finely minced
chives for garnish

Shamrock Chips:

4 spinach tortilla wraps
1 T. vegetable oil
salt to taste

Directions

1) Preheat the oven to 375 degrees.

2) Chop the salsa ingredients into large chunks and place them in a blender. Blend the ingredients until they reach your preferred consistency. We suggest using the lowest setting to avoid over blending.

2) Place the salsa in the fridge to keep cool until you’re ready to eat.

3) Cut the tortillas with a shamrock cookie cutter to create your chips. Each tortilla should yield about 6 – 8 chips.

4) Place the shamrocks on a cookie sheet. Lightly coat them in oil using an oil sprayer or basting brush. Sprinkle with salt.

5) Bake for 5 – 6 minutes or until crispy. These can brown quickly, so we suggest checking them regularly while they are in the oven. Allow the chips to cool when done.

6) Remove salsa from fridge, garnish with chives, and serve with your shamrock tortilla chips.
