Summer Berry No-Bake Icebox Cake

Today, we want to kick off the season with a yummy dessert perfect for any summer occasion! This No-bake Summer Berry Ice Box Cake is a great mess-free option to satisfy a crowd on a hot day. Plus, it looks as good as it tastes! Everyone will think you spent hours preparing when really, it only takes a few simple steps. The best part? You can easily personalize this recipe to fit your tastes; take advantage of those sweet in-season berries or use tropical fruit for an extra summery flavor! Ingredients

Special Equipment
8 in x 8 in glass dish or pan
Mixing Bowls
Hand Mixer

Cream Mixture
2 cups heavy whipping cream
8 oz package of cream cheese (softened)
1/2 teaspoon vanilla extract
1/3 cup powdered sugar
1 teaspoon fresh lemon juice
12 graham crackers

Fruit
(2 1/2 cups mixture of all berries)
Blackberries
Raspberries
Blueberries
Strawberries (hulled and sliced; divided leaving the prettiest slices for the top layer)

Step 1

Pour heavy whipping cream into a bowl and whip with a hand mixer just until it holds soft peaks.

 Add powdered sugar, vanilla extract and lemon juice and whip to combine until stiff peaks form. Do not over mix. Set aside 1 cup whipped cream for topping.

Step 2

In a separate large bowl, beat softened cream cheese until smooth. Fold the cream cheese in with the 3 cups of your whipped cream.

Step 3

To assemble your cake, spread a thin layer of the cream mixture in the bottom of your 8 x 8 pan.

Place 3 graham crackers across one end of the pan and then break up 1 to 2 more crackers as needed to fill in the gaps to cover the entire layer.

Spread half of the cream mixture on top.

 

Use approximately 1/3 of the mixed berries to create the next layer of the cake.

Step 4

Top with another layer of graham crackers, breaking them as needed to make them fit. Spread the remainder of the cream mixture over the top and add another 1/3 of the berries.

Step 5

Top with the final layer of graham crackers. Spread the reserved 1 cup of freshly whipped cream evenly over the top. Place the last layer of the prettiest berries reserved for the top.

Step 6

Refrigerate your cake for at least 4 hours or overnight until the graham crackers have softened completely. Serve chilled and add optional toppings if desired.
