Mason Jar Lid Valentine’s Day Cheesecakes

MASON-JAR-CHEESECAKE-HEADLINEWhy is it that everything in mini form tastes so much better? Not to mention, it looks cuter too! And it turns out, mason jar lids are the perfect pie pans for making cute mini desserts! From pies to tarts the possibilities are endless and yes, these melt-in-your-mouth mini raspberry cheesecakes are no exception. So enjoy and prepare to have your mouth be hugged with delicious goodness!1-14


WHAT YOU WILL NEED:

Crust

  • 1 1/2 cups graham cracker crumbs
  • 5 Tbsp sugar
  • 1/3 cup melted butter

Filling

  • 3 (8oz) packages cream cheese, room temperature
  • 1 1/2 cups sugar
  • 4 eggs
  • lemon juice from half a lemon
  • 1 tsp pure vanilla extract

Other 

  • Raspberry sauce
  • 12 to 18 mason jar lids

1-1Start with your graham cracker crust and combine all ingredients until it resembles a wet sand texture.1-2Evenly spread out the mason jar lids onto a cooking sheet and place a heaping spoonful of graham cracker crust into each lid.1-3Press mixture down and around the lip of the mason jar lid. Repeat for each lid.
1-4Place in oven on 350ºF for 5 minutes or until golden brown. Take out of the oven and let cool completely.
1-5Meanwhile assemble the cheesecake filling (leaving out the lemon juice) and be sure to mix until smooth. 1-7After cheesecake filling is properly mixed, add in the juice from half of a lemon(about 1 tablespoon). Be sure not to add this before mixing! The lemon can cause the cream cheese to curdle.
1-6Divide cheesecake mixture evenly into each mason jar lid. It will be about 2 tablespoons of filling in each lid. Make sure to fill almost all the way to the top.1-8Place back in the oven on 350ºF and bake for 20 minutes or until the cheesecakes are properly set. If they start to crack they are getting over cooked.
1-9Place in refrigerator for 1 to 2 hours to allow cheesecakes to cool completely.1-10Lastly, drizzle the raspberry sauce on top of the cheesecakes however you like. We chose to make a “heart” design on each cheesecake. We used a heart shaped cookie cutter to get a perfect heart shape. 1-11Wah-lah! That’s all there is to it!
